Hasselback potatoes

The Hasselback potatoes: these must have their origin in the Little House on the Prairie, right?! But you couldn’t be more wrong – the original recipe comes from Sweden. Over the past ages, restaurant Hasselbacken in Stockholm was quite the place to be for refined foods. However, the recipe for Hasselback potatoes is relatively young. In the fifties, a trainee chef was looking for an innovative way to shorten the preparation time of potatoes and came up with this new technique. So the background story isn’t as wild west as we initially thought, but nevertheless very interesting. Fun fact: Hasselbacken restaurant is still in business!

Many BBQ restaurants serve this dish and I don’t blame them: the dish looks amazing and tastes great. You couldn’t ask for more! Additional advantages to this preparation method are that by cutting the potato, 1. added flavors will enter it and 2. the cooking time is significantly shorter. It sounds like a winner to us!

Serving suggestion

Serve this dish next to a juicy steak and combine with, for instance, the grilled leeks to end up with a complete BBQ’ed dinner!

Bruise the rosemary and thyme, and add to the oil. Cut the garlic cloves and add this to the herb mixture as well. Season with salt and pepper.

Scrub the potatoes clean to remove any dirt or grit, take two wooden spoons and place them either side of a potato. Using a sharp knife, slice straight down the potato until your knife hits the edge of the spoon. Cut into very thin slices of about 0.1-inch thick.

Prepare your BBQ for indirect grilling at approximately 356°F (180°C).

Place the potatoes on the indirect side of the BBQ.

As soon as the potatoes start to fan out, it’s time to pour the oil mixture on top of the potatoes. Make sure to coax the oil mixture between the slices! Sprinkle some grated cheese over the potatoes and close the lid.

After about 45 minutes, our Hasselback potatoes were cooked. To taste, sprinkle with some sea salt and serve with (homemade) mayonnaise.
