Drop the beet! Time for a new BBQproof recipe, without any meat or fish! Come again?! This recipe is a bird of another feather! I’ve been really surprised by this recipe since I am quite the fish and meat fanatic. Nevertheless, these grilled beetroots have made a high entry in my personal all-time favorites. This amazing combination of beetroot, balsamic vinegar, and fresh basil make this dish for me a so-called “match made in heaven”.

We came up with this recipe since we’re frequently asked about nice side dishes to serve with our other recipes.And we wouldn’t be called BBQproof if we couldn’t come up with tasteful side dishes that definitely are winners to cook on a BBQ. Personally, we love to cook an entire dinner on the BBQ! For instance, we advise serving the grilled leeks next to the grilled prime rib, but there are many side dishes who could be a great sidekick to a beautiful main BBQ dish.

Peel the beets with a vegetable peeler. Cut with a sharp knife into thin slices (of approximately 0.1-inch).Tip! Use a mandoline slicer to slice the beets into even slices. Drizzle the slices of beet with olive oil and sprinkle with salt.

Cut into slices of approx. 0.1-inch.

Now fire up your BBQ to a high temperature of around 428°F (220°C). We’re going to direct grill the beets, right above the coals. Carefully place the slices on the grill and gently close the lid to prevent flame flare-ups.

Flip the slices after about 4 minutes, to ensure that both sides will be covered in nice grill marks. After grilling for another 4 minutes, remove the slices from the BBQ and serve them on a nice platter. Drizzle a bit of quality balsamic vinegar on the beets and sprinkle with some salt and pepper. Finally, garnish your lovely platter with some fresh basil.
